Inside Los Danzantes Mezcal Distillery



The artisanal elaboration process of making mezcal involves cooking, crushing, fermenting, distilling and ageing.


Three tons of the pineapple-shaped hearts of the plants are roasted underground for 3 to 5 days in a wood-fired earthen pit.

Complex carbohydrates turn into simple sugars and give the roasted agave hearts a delicious sweet and smokey aroma.


The roasted agaves are crushed under a huge horse-drawn Egyptian millstone.


The mash is allowed to ferment naturally in wooden tubs for approximately 8 days.


The resulting liquid is doubly distilled in small batches using copper stills to reduce impurities and undesirable types of alcohol.



Some of our premium mezcals are allowed to age up to 5 years in French white-oak barrels, making them perfect for sipping!
